Easy, Homemade Chimichurri Sauce

This legendary Argentinian sauce is easy to make. Made with fresh herbs, garlic and vinegar this sauce will quickly become your new favourite condiment! Chimichurri is an uncooked sauce traditionally served up at barbecues with grilled meats. It’s flavourful, healthy and can be whipped up in a blender in less than 10 minutes!


1 small onion(peeled and chopped)

1 green chilli(deseeded)

2 garlic cloves(peeled)

1 tsp dried smoked paprika

handful of fresh parsley

handful of fresh coriander

1 gherkin

pinch of salt for seasoning

1 tsp dried oregano

1 tbsp red wine vinegar

1 tbsp olive oil


To make the chimichurri sauce, blitz the olive oil, red wine vinegar, parsley, coriander, oregano, garlic, onion, gherkin, smoked paprika and chilli with a blender. Blend to a saucy consistency. Season with a pinch of salt. This herby, garlic, tangy, spicy sauce packs a flavourful punch. Serve on a grilled steak or any other grilled meat and enjoy this summer’s hottest condiment!

Notes: Use it on beef, chicken, pork and fish. Perfect stirred into soups, spread on grilled cheese or tossed with pasta too! I like to use it on homemade burgers. Stores extremely well for a week in a glass container in fridge and the flavour continues to improve.
