Gherkin Coconut Curry might seem a bit off the wall but this curry is not only colourful, healthy and delicious, it’s also easy to make. One of the simplest recipes you'll come across this year.
1 x tin of coconut milk(and 1/2 tin of water - use empty coconut tin)
1 tsp cumin powder
1 & 1/2 tsps of turmeric powder
1 x red chilli(deseeded and chopped)
1/2 tsp cumin seeds
5 x garlic cloves(crushed)
1/2 tsp coriander seeds
Pinch of salt and pepper
1 x red onion(skinned and finely chopped)
6 x fresh gherkins(chopped into round medium size slices)
In a food processor whizz chilli, cumin powder, turmeric and coconut milk until combined. Once whizzed place mixture in a medium cook pot. Place cook pot on a medium heat(do not let mixture boil), add garlic, cumin seeds, coriander seeds, onion, 1/2 tin of water(add more water during the cooking process if required) and gherkins. Cook until gherkins and onions are tender. Season with salt and pepper to desired taste. Serve alongside rice (we served ours with Tesco’s Roasted Vegetable Couscous). Enjoy!
