Leek & Salmon Soup

Cold Outside? Warm yourself up with Leek and Salmon Soup.

Skill Easy     Serves 5     Cook 1 hour


1 bayleaf 2tsp dried chives 2 leeks (chopped) 2tbsp olive oil 1tbsp dairy free butter salt and pepper 4 shallots (peeled and chopped) 80g kale 500g baby potatoes (chopped) 4 garlic (peeled and crushed) 1tsp fennel seeds 1500mls of fish stock 70g smoked salmon slices (chopped) parsley for garnish

This delicious Leek and Salmon Soup is an easy, one-pot wonder!


1. In a large stock pot heat olive oil over a low heat. Add shallots cook until tender. Add butter and melt over a low heat.

2. Add leeks and potatoes, season with salt and pepper. Add chives, bay leaf, fennel seeds, garlic and continue to gently stir cook for 12 minutes.

3. Add fish stock and bring to the boil, reduce heat and cook partially covered for 30 minutes.

4. Add kale, salmon and cook for 10 minutes on a low heat. Season with more salt and pepper if required. Prior to serving garnish with parsley. Serve with crusty bread. Enjoy!
