Mocha Banana Cupcakes
Have your coffee and eat it too with these delicious Mocha Banana Cupcakes!
1 cup demerara sugar 2 eggs 1/2 cup dairy free butter 3 bananas mashed 1 tsp vanilla extract 1 tsp baking powder 2 cups plain flour 1/2 cup unsweetened cocoa powder 1 tbsp instant coffee granules
Preheat oven to 180 degrees celsius. Line wells of a standard size muffin tin with cupcake cases. Cream together the butter and sugar in a bowl (by hand or with a electric mixer). Add in the vanilla extract and eggs. Add in the bananas, beat until well mixed. Sift in the flour. Sift in the cocoa powder. Add baking powder. Add in the coffee granules, mix well. Place a scoop of mixture into each cupcake case. Bake about 15-20 minutes depending on your oven, until a skewer comes out clean. Allow to cool before frosting. While cooling make the frosting (we frosted ours with a simple buttercream frosting made using Sugar & Crumbs Banana Split Flavoured Icing Sugar). Enjoy!
