Quick and easy recipe for how to make Moroccan Ghriba Cookies at home.
70g Dark Chocolate Bar (dairy free) 80g iChoc Almond Orange Rice Chocolate Bar (dairy free) 50g dairy free butter 100g caster sugar 2 eggs 1 tsp vanilla extract 1/2 tsp almond extract 150g ground almonds 1 tsp baking powder 100g plain flour 50g cocoa powder (unsweetened)
Icing sugar for coating (place a handful of icing sugar on a plate, top up when needed for coating rolled dough balls)
Pre-heat oven to 180 degrees celsius. Place chocolate bars and butter in a microwave-safe bowl, stopping and stirring at 15 seconds intervals until mixture is melted. Add in caster sugar, eggs, vanilla and almond extract. Stir all the ingredients together until smooth. Add in ground almonds, plain flour, cocoa powder and baking powder. Mix all the ingredients together until well combined.
Spoon a tablespoon of dough and roll into a ball. Roll each dough ball in icing sugar until completely coated.
Transfer coated dough balls to a lined baking tray and lightly press down each dough ball (do not flatten completely).
Place in oven and bake for 10 to 15 minutes, until cookies are firm on outside.
Wait for cookies to cool down before transferring to a wire rack to cool completely. Dust cookies with a sprinkling of icing sugar.
