These strawberry and banana muffins are super moist, super fruity and absolutely divine! The perfect way to start your day.
2 bananas , ripe, smashed
1/3 cup unsweetened almond milk
1/3 cup dairy free butter
3/4 cup caster sugar
1 teaspoon vanilla extract
1 teaspoon bicarbonate of soda
pinch of salt
1 1/2 cups plain flour
1 cup strawberries , finely sliced
They are super easy to make.
Preheat the oven to 180 degrees celcius.
In a large bowl cream butter and caster sugar together until light and fluffy. Mix in mashed bananas and almond milk. Mix in egg and vanilla extract. Add the plain flour, bicarbonate of soda and salt.
Add sliced strawberries and mix evenly through the mixture.
Line a regular size 12-cup muffin tin with paper cases. Pour the mixture evenly into each paper case about 3/4 full. Bake for about 20 minutes or until a skewer inserted in a muffin comes out clean. Cool on rack. Enjoy!
Perfectly sweet, moist and loaded with healthy goodness. There really isn’tmuch you will not love about this recipe. The whole family will love these muffins.
