Thai Prawn Courgette Noodles

Wondering what to do with courgettes? Put them to good use in this recipe for Thai Prawn Courgette Noodles. It’s a big plate of healthy comfort food.


3 courgettes (sliced)

1 red chilli (deseeded and finely chopped)

1 red onion (finely chopped)

2 tsp fresh ginger (peeled and grated)

1 tbsp olive oil

250g peeled prawns x 2 packets

6 garlic (peeled and crushed)

1 lime (zest and juice)

250g fine egg noodles

Pinch of pepper

Pinch of salt

Garnish with coriander


Heat the olive oil in a pan on a medium heat. In the same pan add the garlic, onion, chilli, ginger and cook for a couple of minutes until soft before adding the lime juice and zest, salt and pepper and stirring through. Now add the courgettes and stir all the ingredients together and cook until the courgettes soften before adding the prawns to the pan stirring through and cooking until the prawns are cooked. Serve with fine egg noodles (cook noodles as per packet instructions). Garnish with coriander. Enjoy.
