A healthy tomato soup that’s made with protein-rich quinoa. Quinoa adds body and heartiness to this warming bowl of tomato soup which is packed with nutritious ingredients.
1 tbsp olive oil,
2 tsp ground cumin,
1 tsp ground coriander,
1 tsp smoked paprika,
1 tbsp dairy free butter,
2 finely chopped onions(peeled),
6 crushed garlic cloves(peeled),
600ml vegetable stock,
2 x 400g tin of chopped tomatoes,
salt & pepper to taste,
1 tsp dried oregano,
1 tbsp fresh parsley,
1 large carrot(chopped finely),
1 tsp lemon juice,
1 tsp fennel seeds,
fresh basil for garnishing,
Cook quinoa as label directs.
In a medium pot heat butter and olive oil on medium until butter melts. Add onions, carrot, garlic, and fennel seeds. Cook for 4 to 6 minutes, or until vegetables begin to soften, stirring occasionally. Add oregano, cumin, coriander and paprika. Add tomatoes and vegetable stock. Add precooked quinoa. Heat to simmering on high. Simmer 15 minutes, stirring occasionally. Add lemon juice and parsley. Season with salt and pepper. Garnish with basil and serve with crusty bread. Enjoy!
