Salad on the plate in under 30 minutes.
1 tbsp olive oil 2 celery sticks (chopped) 2 garlic (peeled and crushed) 4 shallots (peeled and chopped) 1 yellow pepper (deseeded and chopped) 1 small carrot (chopped) 1 tomato (chopped) 1 tsp dried chilli flakes 1 tsp smoked paprika pinch salt and pepper 225g halloumi cheese (chopped into cubes) coriander for garnish 1 red chilli (deseeded and chopped) 2 tbsp of honey juice of half a lemon 125g spinach
Heat 1tbsp of olive oil in a large pan and gently fry shallots, carrot and pepper until tender. Add celery, garlic, chilli, tomato and fry for 1 minute, then stir in the Halloumi and cook for 4 minutes. Add in the smoked paprika, dried chilli flakes, honey and lemon juice. Stir through the spinach. Season with salt and pepper. Enjoy! (Garnish with coriander prior to serving).
